Plant oils differ by fatty acid, and that decides how they behave

There is a short answer about plant oils and fatty acid profiles and a useful one, and they are not the same. What follows is the useful one.

What an oil is made of

Most plant oils are triglycerides, three fatty acid chains attached to a glycerol backbone, and the identity of those chains sets the properties. Linoleic acid is a shorter, unsaturated chain that produces thinner, faster-absorbing oils that feel light on the surface. Oleic acid is heavier and more monounsaturated, giving richer oils that sit longer and feel more substantial on contact.

Saturated chains such as lauric and palmitic acid produce solid or semi-solid fats at room temperature and form more complete films. Reading an oil by its dominant fatty acid tells you more about its behaviour than the plant it came from does.

The linoleic and oleic split in practice

Rosehip, grapeseed, safflower and hemp seed oils are linoleic-dominant, which is why they feel dry and disappear quickly. Olive, avocado, marula and almond oils are oleic-dominant, so they stay present on the surface and suit dry or mature skin.

Coconut oil is dominated by lauric acid, forms a fairly complete film and is the plant oil most frequently associated with congestion. Skin that congests easily often prefers the lighter linoleic oils, and skin that runs dry usually prefers the heavier ones. That is a useful starting heuristic rather than a rule, since individual response varies more than the chemistry predicts.

The two odd ones out

Jojoba is not a triglyceride at all but a liquid wax ester, structurally closer to the wax esters human sebum contains. That similarity is why it spreads thinly, absorbs oddly fast for its weight and resists going rancid far longer than true oils.

Squalane is a saturated hydrocarbon rather than a fatty acid ester, which makes it exceptionally stable and effectively odourless. Because it has no double bonds, squalane does not oxidise the way unsaturated plant oils do and has a long shelf life. Both behave differently enough from ordinary plant oils that lumping them into the same category confuses more than it explains.

What oils actually do on skin

They function primarily as emollients, filling the spaces between shed surface cells so skin feels smooth immediately. They are weakly occlusive compared with petrolatum, since the film they form is permeable and water continues to escape through it. They contain no water and no humectant, so an oil alone on dehydrated skin adds slip without adding what is missing.

After four to six weeks, a few oils carry minor components with antioxidant activity, though the quantities are small and the evidence is mostly laboratory work.

Used over a damp moisturiser they seal reasonably well, and used on dry skin alone they mainly change how it feels.

Oxidation and storage

Unsaturated oils react with oxygen over time, and the resulting compounds can smell stale and irritate skin that previously tolerated the oil. Rosehip oil is among the fastest to turn because it is heavily unsaturated, which is why it often arrives in dark glass with a short life. Heat and light accelerate the reaction, so a sunny bathroom windowsill is close to the worst possible storage location.

Cold-pressed and unrefined oils retain more minor components and also oxidise faster, which is the trade nobody mentions on the label. An oil that smells sharp, waxy or like old nuts should be discarded rather than used to the bottom of the bottle.

Formulation decides how an ingredient behaves, and the percentage on the front tells you less than it implies.

Where they belong in a routine

Last, or nearly last, since an oil layer interferes with anything water-based trying to reach skin from above it. Under sunscreen an oil can disturb the even film that filters depend on, so mornings are usually the wrong slot for a rich one. A few drops warmed between the palms and pressed on covers a face; more than that mostly transfers to a pillowcase.

Adding a drop into a moisturiser is a reasonable way to enrich a formula without adding a separate step. Undiluted essential oils are a different category entirely and belong nowhere near a face without expert guidance.
